Quinoa (Keen – wah) Pilaf
Ingredients

1 cup quinoa
·
1 cup chopped celery
sticks
·
½ cup chopped sweet red
pepper
·
½
cup boiled chic-peas
·
1 tbsp olive oil
·
2-3 cloves garlic, 1 tsp
crushed ginger
·
½ tsp mustard seeds, 1
bay leaf, ¼ tsp haldi, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp
salt and black ground pepper to taste

1-3/4 cups water
Method
·
Rinse quinoa twice and
soak for 5 mins
·
Heat oil, add bay leaf,
mustard seeds, ginger and garlic and sauté
·
Add celery, red pepper
and sauté for 5 mins
·
Add cumin powder,
coriander p. and haldi
·
Turn the heat to medium
and add quinoa, stir until dry and starts to pop
·
Add hot water, salt and
bring it to boil
·
Simmer for 15 mins or
until done
Stir in chic- peas, dhania leaves, black pepper
and serve hot.
