Undhiyo
Ingredients
Vegetables

1 cup surati papdi
·
1 cup Yam
·
5 small potatoes
·
5 small eggplants
·
1 sweet potato
·
1 raw banana
·
½ cup Tuver Daana
·
½ cup Lilva
·
Muthiya
Knead together 1/3 cup besan, 1/3 cup flour, ½ cup fresh methi leaves, ¼
tsp. each salt, red chilly powder, dhania powder, haldi and 1tbsp sesame
seeds, 3 tsp oil with little water. Make small muthiyas and fry till
dark brown in medium flame.
Masala

1 cup frozen or fresh
coconut, 2 tbsp sesame seeds, 2 tbsp peanuts, juice of 1 lemon, 1 tbsp
cashews, 1 tbsp ginger and garlic paste, 2 green chillies, 1 tsp amchoor
powder, 1 tsp sugar, ¾ tsp haldi powder, ½ tsp ajwain, a pinch of heeng,
½ tsp garam masala
Method
·
Roast and grind sesame
seeds, cashews, coconut and peanuts.
·
Add dhania leaves,
ginger, garlic and green chilly paste, aamchoor powder, dhania
powder,red chilly powder, haldi, garam masala, sugar, salt and
lemon juice. Mix them well
·
Saute or deep fry yam
and sweet potatoes
·
Make two slits in
eggplants and potatoes and fill in the above masala
·
Sprinkle the left over
masala on the chopped and fried vegetables
·
Heat oil in a heavy
bottom pan and add heeng and ajwain
·
Add all the vegetables
keeping aside yam, sweet potato and muthiya
·
Add little water and
cover and cook on low heat till the potatoes are done
·
Add sweet potato, yam
and muthiya and cook for 5-6 mins
·
Sprinkle garam masala
and dhania leaves and keep it covered for some time before serving.
