     SOUTH INDIAN


AVIAL

Ingredients

·  250 gms vegetables including squash, plantain, eggplant, tindora, green beans, carrots, drumstick, yam, cucumber, few raw mango pieces

·         2 tbsp regular oil and 1 tbsp coconut oil

·         Curry leaves

·         ½ cup grated coconut

·         3 – 5 green chillies

·         1 tsp cumin seeds

·         ½ tsp haldi

·         Salt acc to taste



 

Preparation

·         Grind together coconut, green chillies and cumin seeds

·         Heat 2tbsp regular oil and add curl leaves, vegetables and cook them on low heat without adding water

·         Do not overcook, when done add salt, haldi and coconut paste stirring well

·         Remove from fire and add 1 tbsp of hot coconut oil

·         Mix lightly and serve.




DOSA

Ingredients

·         1 cup urad dal

·         4 cups rice (ponni rice or idli rice)

·         ½ tsp methi seeds

Preparation

 

·      Soak urad dal and rice overnight  separately and grind together separately with methi seeds

·       Mix the batter well and make dosas




INSTANT RAVA DOSA

Ingredients


·         ½ cup rava

·         ½ cup rice flour

·         ¼ cup maida

·         ¼ cup yogurt

·         Green chillies, salt, coriander leaves and curry leaves

Preparation

·         Mix everything by adding little water and keep aside for 2 hrs

·         Make idlis or dosas



IDLI

·         Soak 1 cup urad dal and 2 cups rice overnight separately

·         Grind together, add salt and steam them in idli containers.

 

 

SAMBHAR POWDER

·         ½ cup chana dal

·         ½ cup urad dal

·          ½ cup dry dhania seeds

·         ¼ - ½ tsp heeng

·         A  handfull dry whole red chillies

·         ½ tsp rai

·         2 tsp jeera

Preparation

·         Roast them on tava with very little or no oil and grind.

 

 

CUTNEY POWDER

·         ½ cup dry coconut

·         1tbsp chana dal

·          ¼ tbsp urad dal

·         whole dry red chillies and salt acc to taste

Preparation

·          Roast and grind and serve with idlis.

 

 

COCONUT CHUTNEY

·         1 cup grated coconut

·         ¼ cup roasted peanuts

·         1 tbsp roasted sesame seeds

·         1 tbsp chana dal

·         ½ cup yogurt

·         Green chillies and salt acc to taste

Preparation

·         Grind them into a fine paste

·         Vagaar with little oil, rai, methi seeds and red chillies.

 

TAMARIND RICE

·         1 cup boiled rice

·         Heat oil and add curry leaves, rai, ½ tsp each chana dal and urad dal, haldi, green chillies, salt, tamarind paste and 1 tsp dry roasted sesame seeds

Preparation

·         Mix everything and add boiled rice

·         Mix well and garnish with roasted cashews.

 

CURD RICE

·         1 cup warm boiled rice

·         2 – 2 1/2  cups yogurt

·         ½ cup sour cream

Preparation

·         Mix well, add salt

·         Vaghar by heating 1 tbsp oil and add curry leaves, red whole chillies, cumin seeds, rai, little urad dal and chana dal

·         Garnish with green chillies and coriander leaves.
