Recipes of the Day January 18, 2012

Paneer Jalebi (Courtesy Film Actress Padma Khanna Ji)

Ingredients
• 500 gm grated or homemade paneer
• 125 gm flour OR Carnation powder
• 500 gm sugar
• 1 tsp Rose or kewra essence
• Silver Work
• 1 tsp elaichi powder
• 25 gm pista
• A pinch of baking powder
• ½ - 1 cup milk
• Pure ghee for frying

Method
• Mash paneer and add baking powder, flour OR carnation powder and knead it with milk making a smooth paste
• Put the paste in a plastic condiment bottle OR make a mehandi cone OR in an icing bag
• Fry the batter in ghee over medium heat until light brown giving it a jalebi shape
Syrup
Make 1 taar ki chaashni with 2 cups water and 500 gm sugar. Add the essence and elaichi powder and let it cool
Now dip the fried jalebi’s in the syrup for around 10 mins
Take them out in a serving dish and sprinkle pista and decorate with silver work on top.

 



Vegetarian Momos

Method

• Heat some oil in a pan and add 1 tsp each of each crushed ginger and garlic and let it brown
• Add chopped beans, carrots, baby corn(crushed), cabbage, salt, crushed pepper, soya sauce, vinegar, tomato ketchup, spring onions and 1 tbsp cornstarch mixed in 2 tbsp water
• Do not overcook the vegetables and let them be crunchy
• Roll the prepared dough into small chappatis, thinner on outside and thicker in the center
• Fill in the stuffing and give it a shape by binding the edges
• Steam them in the momos box or idli maker or any steam container for 10 – 12 mins
