Spinach with creamed corn
Ingredients

3 cups chopped
spinach
·
2 tbsp water
·
½ tsp sugar and salt
acc. to taste
·
1 firm tomato
·
2 cans cream of corn
·
1 ½ cups milk
·
½ tsp freshly ground
pepper
·
½ cup grated cheese
of your choice
·
2 tbsp butter
·
Green chilly
(optional)
Method
·
Cook the washed and
chopped spinach with salt and sugar without water for 5 mins
·
Drain and squeeze the
spinach reserving its water and keep aside
·
Melt butter and add
green chilly, milk and the liquid of the spinach and
boil
·
Add the cream of corn
and simmer till thick and smooth
·
Add half of the
cheese, salt, pepper and remove from fire
·
Grease an oven proof
glass dish with butter and spread spinach and then the creamed corn on
top
·
Garnish with few
tomato slices and grated cheese and bake for 20 mins or till light
brown. Serve hot.
