Vegetable Minestrone
Soup
Ingredients
·
1 tbsp extra virgin
olive oil
·
¾ cup chopped onion
·
2 cloves garlic minced
·
3 cups water
·
2 cups diced zucchini
·
1 cup diced carrot
·
¾ cup diced celery
·
3 – 3 ½ cups tomato
puree (canned or fresh)
·
¼ cup cooked ditalini
pasta
·
1 cup canned cannellini
beans OR any other white beans OR boiled chic-peas
·
¼ tsp oregano, 1 tsp dry
basil or 2 tbsp fresh basil chopped, salt and pepper acc. to taste
Method
·
Heat oil, add onions and
sauté until light brown
·
Add garlic along with
all vegetables, beans or chic-peas, basil, oregano, salt, pepper, tomato
puree
·
Sauté for a little while
and add water and bring it to boil
·
cover for about 20
minutes stirring occasionally
·
Add boiled pasta and
adjust spices to suit your taste. Serve hot with bread sticks or garlic
bread.
