Dum Aloo – Courtesy Madhu
Ingredients
• 450gms small potatoes
• 360gms mustard oil
• 60gms ghee
• ½ tsp red chilly powder
• 2 tsp dhania powder
• 2 green chillies
• 150 ml water
• 15 gms ginger
• ½ tsp kashmiri garam masala
• Fresh chopped dhania leaves
• Salt acc to taste
Method
• Boil potatoes – cool, peel and prick with fork
• Heat oil and fry potatoes till golden reddish brown and keep aside
• In a separate pan heat ghee and add red chilly powder, dhania powder, water and boil for 2 – 3 mins
• Add potatoes, garam masala, ginger and fresh coriander
• Cover and cook till it is well coated and then bake in the oven for 30 mins at 350 degrees temp.

• Mix together 1 cup Maida (all purpose flour) and ½ cup sugar and little kesar
• Add in little water stirring constantly till it resembles dosa batter
• Heat ghee on a tava and pour 1tbsp batter at a time and cook the way you make dosa.
Rabri – Courtesy Kamini
• Boil 1 liter half and half for 10 mins, add 2 cans evaporated milk
• Cook for another 10 mins stirring constantly
• Add sugar or condensed milk acc to taste and keep stirring until mixture thickens.
